Crab Fried Rice With Mushrooms And Scallions

Ingredients:
- 1 1/2 cups of long-grain rice
- 1/2 teaspoon of salt
- 1 tablespoon of vegetable oil
- 2 tablespoons of butter
- 1/2 pound of crabmeat (picked over to remove any shell fragments)
- 6 ounces of mushrooms (sliced)
- 4 scallions (sliced, white and green parts separated)
- 1 tablespoon of soy sauce
- 1 egg (lightly beaten)
- 1/2 teaspoon of black pepper

Instructions:
Step 1: Rinse the rice with cold water until the water runs clear. Drain and transfer the rice to a medium-sized pot. Add salt and 2 cups of water. Bring to a boil over high heat.
